Wine and pizza now pair at the High Street Wine bar in San Antonio’s Pearl with flatbreads

In this place craving pizza after a glass or two of wine, High Street Wine Co. at the Pearl has found success. The wine bar recently added an oven to its arsenal of kitchen equipment, and over the past two months that has meant a trio of enthusiastically flavored flatbreads joining the usual array of meat and cheese boards.

The best is the Fontina D’Aosta & Prosciutto Flatbread ($17). Flatbread is a close cousin of pizza, but one step has been taken out of it. Layered with a generous amount of salted prosciutto and Fontina cheese, this flatbread is the size of a personal pizza and partners fig jam and reduced balsamic glaze with its complex stack of flavors.

But the real star here is the arugula. This flatbread is topped with an insane amount of that ever so bitter tender green, probably 2 cups of fresh leaves or more. It’s basically a pizza with a salad on top.

The carbs at the base of this stack aren’t left out either. The flatbread itself has a tender texture similar to a good pita bread that has been elongated into an oval shape and cut into six pieces. There’s a bit of a crunchy edge, but what you mostly get is a soft, plush platform with just enough stiffness to hold under its payload of trim.

I tried another of the three flatbreads – the classic Neapolitan ($12) – and can give it a hearty endorsement as well. Topped with crushed San Marzano tomatoes, fresh mozzarella and a generous drizzle of basil pesto, it will satisfy any pizza craving. The pesto is a real gem here too. It’s made with a crisp olive oil and accented with whole pine nuts, all of which give the flatbread a nice contrast of flavors and textures.
