Marc Vetri’s new Italian steakhouse is set to open at 915 Lancaster Avenue in Bryn Mawr, starting July 5 at 5 p.m., a member of the restaurant team told Foobooz. The restaurant, called Fiore Rosso, will feature deluxe cuts of dry-aged meat, with four different steak options, plus a slew of pastas and snacks like 24-month-old prosciutto and durum wheat focaccia. . For this new project, Vetri has former Osteria chef (and Vernick veteran) Jesse Grossman leading the kitchen as Fiore Rosso’s chef de cuisine.

Fiore Rosso is the latest example of what appears to be a pattern of talented chefs and top-notch operators turning to suburban outposts.

Vetri was, to say the least, a vocal critic of the city’s response to the pandemic. He was pissed off about countless things and loud about them all, but was mostly upset (understandably) with the way restaurants and diners were treated by the city during the worst times. So, unsurprisingly, when he announced his new restaurant a few months ago, he let everyone know he was going to open in the suburbs, where restrictions were less stringent and enforcement more lax.

Fiore Rosso is now accepting dinner reservations from Tuesday to Saturday.

There has been no public announcement of the opening of Fiore Rosso yet. About two weeks ago, an Instagram comment from Fiore Rosso’s account said they would be releasing an update “soon”.
