Without the pandemic, the new Steve Fields Steakhouse probably wouldn’t exist.

“If it wasn’t for COVID[-19]I probably wouldn’t have done that,” Steve Fields said of his new restaurant, which opened in late February.

After closing Steve Fields’ Steak & Lobster Lounge in 2019 after 14 years in Plano, the restaurant’s namesake said he planned to go to work at Truluck’s restaurant in Dallas’ Uptown neighborhood. But when the pandemic shook up the restaurant industry, Fields said he decided to go back to his own concept in Plano. After looking at a few spaces along the Dallas North Tollway, Fields said he knew that he wanted to be closer to the location of his old restaurant at the intersection of Preston Road and Park Boulevard. Then he found his new space, which was most recently occupied by Brick House Tavern + Tap at that same intersection.

“We’ve been in West Plano for 15 years, so here we go again for another 15,” he said.

Fields said he was very pleased with the response the restaurant received in its first few weeks. As patrons receive the steak and seafood they’ve come to know, the restaurateur pointed out that this is the “new version” of Steve Fields, as designed by B. Russo Designs.

“If you walk in expecting dark old wood, that’s not who we are,” he said. “We wanted [appeal to all customers] a bit more, [and] so far the response [everyone] was very good.

The restaurant menu is also shorter, Fields said. Where his previous establishment had over 50 entrees and over 200 bottles of wine, the new version has 37 entrees and just over 100 bottles of wine. Still, he said those totals could increase as everyone gets comfortable in the new space.

“I have new items on the menu,” Fields said, pointing to the new wagyu skirt steak and meatballs. “We’ve added a few new things, but we’ve kept the heart of our old restaurant as the heart of our entrees.”

Fields said he views his restaurant as a place where people can mark milestones in their lives.

“We’re a party restaurant, for birthdays, anniversaries…or whatever,” Fields said. “We are a neighborhood steakhouse, where the owner is here most nights.”
